    How to cook pickle soup with chicken and rice? Prepare the necessary ingredients for this. You can use any part of the chicken to make the soup. I prefer to take meat with bones so that the broth is richer.

    Rinse the chicken in running water. Then fill with water and put on fire. Bring to a boil. When heating, foam will appear - it must be removed. Boil the chicken for 15-20 minutes. Then remove the meat from the bones and return to the strained broth.

    Peel the onions, carrots and potatoes. Cut the potatoes into small pieces. Carrots can be cut into cubes or half rings. Leave the onion whole. Place the onions, carrots and potatoes in a saucepan and boil for 10-15 minutes.

    Then add rice to the pan. I choose long-grain steamed - it is less overcooked. Boil everything for another 15 minutes.

    Remove the onion from the soup and add the chopped pickles and brine.

    Add salt and spices to taste. I use dried herbs as spices. If desired, you can add hot spices, such as chili pepper. You can add fresh herbs. Warm the soup for another 2-3 minutes and remove from heat. Let it sit covered for a while. Pour the finished soup into bowls and serve hot. Bon appetit!

I haven’t made rassolnik for a long time, but then I just saw a recipe for rassolnik with chicken and rice. While the broth was cooking, I chopped all the vegetables. I didn’t cook the onion whole; I like it in the soup. Therefore, I cut it into squares, carrots into thin cubes, pickled cucumbers into half rings and potatoes into regular cubes. It’s interesting that in this dish there is no need to make a pre-dough and I, as is, raw, sent the onions and carrots into the broth. Along with the cucumbers, I poured brine into the soup. If I had store-bought cucumbers, then of course I would not add such brine. I did not add chili pepper, since this soup was prepared for the whole family, including children. The result was a delicious rich soup. When serving, I sprinkled it with chopped parsley. Thanks for the recipe!
