Pour gelatin into 100 ml of milk and place on low heat. Heat, stirring all the time (!), until the gelatin is completely dissolved and let cool. It is important to prevent the gelatin from sticking to the walls of the saucepan, so stir constantly.
STEP 3

We leave a few berries for decoration, and mash the rest.
STEP 4

Carefully separate the white from the yolk and beat into a thick foam.
STEP 5

Combine raspberries, yolk, sugar, sour cream, remaining milk (25 ml) and beat with a mixer.
STEP 6

Then gently mix with the whipped egg white.
STEP 7

Add cooled milk with gelatin.
STEP 8

Beat for another 15 seconds.
STEP 9

Pour the resulting mass into bowls and place in the refrigerator for 2-3 hours.
STEP 10

Decorate the frozen dessert with the reserved berries and lemon balm leaves. The raspberry treat is ready. Bon appetit!
