Pumpkin soup with ginger
Step-by-step preparation
STEP 1
Prepare the ingredients. To prepare pumpkin and ginger soup, we will need: 800 g pumpkin
STEP 2
Peel the pumpkin; if there are seeds, remove them too. Cut the prepared pumpkin into slices.
STEP 3
Place the pumpkin on a baking sheet lined with foil. Grease with vegetable oil.
STEP 4
Wrap the pumpkin in foil and place in an oven preheated to 180°C for 25 minutes.
STEP 5
Peel the carrots, onion, ginger root and garlic.
STEP 6
Cut the carrots into small cubes.
STEP 7
Cut the onion into small cubes.
STEP 8
Finely chop the garlic.
STEP 9
Also chop the ginger into small cubes.
STEP 10
Heat vegetable oil and butter in a thick-bottomed saucepan.
STEP 11
Add onion, garlic and ginger and cook, stirring, for 2 minutes.
STEP 12
Add carrots, stir and fry everything together for a couple more minutes.
STEP 13
Pour water into the pan. Bring to a boil and cook over medium heat for about 20 minutes until the carrots are tender.
STEP 14
Add roasted pumpkin slices to the pan.
STEP 15
Warm everything together for 5 minutes. Add salt at the end.
STEP 16
Blend the soup with an immersion blender until smooth.
STEP 17
Pour the pumpkin ginger soup into bowls. Bon appetit!
