Won't they tear when turned over? maybe add more eggs to make them stronger? There is three times more pumpkin than flour in the recipe, what will cause them to stick together?

I think they shouldn’t fall apart, especially if they are not made with a very large diameter.

You're right, they don't fall apart! Pumpkin pancakes in a frying pan behave pretty well. I made them the size of large pancakes. Sweet, yellow. I managed to grind the pumpkin in a blender only by adding milk - either the pumpkin was too hard, or the blender was not suitable... The dough came out quite thick, something between pancakes and pancakes. It took about 40 minutes to prepare and fry.
