STEP 1

How to make crispy homemade puff pastry envelopes with cheese and herbs? Very simple! To begin, prepare the necessary ingredients according to the list. You can replace Suluguni with any other cheese: unbrined mozzarella for pizza, regular Russian, etc. The main thing is that the cheese is tasty and melts well. You can also replace or add greens to your taste. Cilantro, green onions, etc. will do.

Grate the cheese on a coarse grater.
STEP 3

Wash the greens, dry and finely chop.
STEP 4

In a bowl, mix cheese, yolk and herbs. You can also add your own spices to taste.
STEP 5

Mix the filling thoroughly with a fork.
STEP 6

Now start preparing the dough. I used frozen puff pastry in square sheets. The dough must be defrosted on the bottom shelf of the refrigerator.

Then roll out thinly on a floured board into an even square. Using a pizza cutter or regular knife, cut the dough into small squares.
STEP 8

Place about a tablespoon of filling in the center of each square. There should not be too much filling, otherwise it will tear the seams of the envelopes and leak out during baking.
STEP 9

Now form the envelopes. Bring the edges of the dough towards the center and pinch well. From one plate I made 9 small envelopes. And from the second plate I decided to make larger envelopes and more filling, so I only got 4 pieces. Large envelopes from a thicker layer of dough are more convenient to form and they do not deform so much during baking.
STEP 10

Transfer the pieces to a parchment-lined baking sheet. Brush the top of the envelopes with egg white and sprinkle with sesame seeds. Bake in an oven preheated to 180°C for 20-30 minutes until golden brown. The exact time depends on your oven.
STEP 11

Serve the finished envelopes with cheese immediately while they are hot. Very tasty! Bon appetit!
