  1. STEP 1

    STEP 1

How to make a tomato and onion salad for the winter? Prepare all the necessary products. Tomatoes are preferable to elongated ones - such tomatoes are perfect for canning. I use regular onions, but you can use red onions, white onions, and even shallots.

  2. STEP 2

    STEP 2

Wash the tomatoes, remove the stems and cut into slices.

  3. STEP 3

    STEP 3

Peel the onion and cut into feathers.

  4. STEP 4

    STEP 4

Place the tomatoes and onions in a separate bowl and salt them.

  5. STEP 5

    STEP 5

Add vegetable oil and stir. The oil can be any vegetable oil, even unrefined, aromatic. Choose according to your taste. Pour in vinegar. This recipe uses 6-9% vinegar, if you have essence, then dilute it with water in a ratio of 1:8.

  6. STEP 6

    STEP 6

Sterilize the jars in any convenient way. I just put the jars with a little water in the microwave for 5-7 minutes. But you can also sterilize them in the oven at 100 degrees for about 30 minutes, or simply hold them over steam or pour boiling water over them. It is enough to boil the lids for minutes.

  7. STEP 7

    STEP 7

Fill the jars with tomatoes and onions.

  8. STEP 8

    STEP 8

Place a towel folded in several layers on the bottom of the pan.

  9. STEP 9

    STEP 9

Place a jar of salad. Pour water up to the hangers, bring to a boil and pasteurize over low heat for 1 hour. As the water evaporates from the pan, add it little by little. Close the jars tightly with lids or roll them up. Store this product under normal room conditions.

  10. STEP 10

    STEP 10

The spicy preparation of tomatoes and onions is ready - it will help you out in the winter more than once! Bon appetit!

I really like this salad fresh, although in winter the taste of the tomato is not at all pleasing. So, your recipe is right on topic, I will definitely use it and make myself such a delicious dish. I think that in winter it will be much tastier than fresh; after all, summer tomatoes, even in a jar, retain their taste and aroma! Thank you very much for the recipe, it’s already in my cookbook!

And in winter, when you open such a jar of salad... wow, how delicious it is and you remember such a gentle, warm summer. I want more....

Yes, I also wanted your salad, it looks very beautiful, the onion is clearly saturated with juice and marinade and it would be good for a fork, but with potatoes)))

Still, it’s better not to cut tomatoes. I did this and that, and also for the sake of experiment, I didn’t add oil to all the jars. Last jar left. They all taste the same, but I liked the whole ones better. Thank you!

This was my first time making this salad. Winter is not over yet, but we ate 5 cans (0.5-1l.). I really liked the salad! 10 ! I added a salad when I fried eggs for breakfast, very cool. Next year I will make more jars. Thanks for the recipe!
