STEP 1
How to stew potatoes with smoked ribs? Prepare the ingredients. Smoked or boiled-smoked ribs are suitable for this dish. It is advisable to choose ribs that have more meat on the bones. Wash and dry the vegetables first.
STEP 2
If you have smoked ribs in one piece, cut them into individual segments. The store often sells already cut ribs, but there is practically no meat on them.
STEP 3
Peel the potatoes and cut into large or medium-sized slices. This is necessary so that the potatoes do not boil over during stewing. If the potatoes are small, then you can leave them whole. New potatoes are great for this dish, which you need to scrape with a knife to remove the thin top skin.
STEP 4
Peel the carrots and cut into semicircles. If the young carrots are small in diameter, cut them into medium pieces so that they do not boil over during stewing.
STEP 5
Peel the garlic and chop finely.
STEP 6
Heat vegetable oil for frying in a deep frying pan or heavy-bottomed saucepan. Add carrots and garlic. Stirring occasionally, fry them over low heat for 3-5 minutes.
STEP 7
Add tomato paste to the pan. Add salt, pepper and stir. Fry everything together, stirring, for another 2 minutes.
STEP 8
Place the potatoes, ribs and bay leaves in the pan.
STEP 9
Pour in about 2 cups of water until the contents are more than half covered. Determine the thickness of the dish according to your taste. If you want it thinner, add more liquid; if you want it thicker, add less.
STEP 10
Cover the pan with a lid and simmer the potatoes and ribs over medium heat for about 40 minutes until the potatoes are cooked through. Determine readiness with a spoon - when pressed, the potatoes should break easily.
STEP 11
Place the finished stewed potatoes with ribs on plates and serve. Bon appetit!
