Pork with gooseberries

Creamy sauce and sour gooseberries go well with meat. I wanted to cook this recipe 3 years ago, when I saw it in a culinary magazine. But in all previous years I only had enough gooseberries for 1-2 recipes, mostly baking or dessert. This year, a small bush at the dacha yielded a simply unimaginable harvest. There was so much of it that I still have berries for new interesting dishes, although everything I planned for this year I have already prepared.

    Heat vegetable oil in a frying pan and fry the pork over high heat for 4 minutes on each side. Cover the frying pan with a lid and remove from heat. This is to prevent the pork from drying out while the sauce is being prepared.

    Sauce. To prepare gooseberry sauce we will need: gooseberries, cream (20% fat), water, sugar, ground black pepper and salt.

    Wash the gooseberries, sort them, remove the stems and dry them.

    Place the berries in a saucepan.

    Add sugar, pour in water. Stirring, bring to a boil and cook over medium heat for another 5 minutes.

    Pour in the cream. Simmer the sauce for another 3 minutes. At the end, season the sauce with pepper and salt.

    Place pork in a baking dish. Pour over berry-cream sauce. You can leave a little sauce for serving the finished dish.
