    Rinse the pork legs and scrape them with a knife. Pour cold water over the legs and leave overnight. In the morning, drain the water and rinse the legs again. This will ensure the broth is clear.

You can check the broth for readiness: pour out a small amount of broth, cool a little and dip two fingers into it and connect: if the fingers stick together, it means the broth will harden.

I really wanted to make jellied meat and just found a recipe on the website for jellied pork legs in a pan. In addition to the legs, I also took a pork knuckle. The legs were washed, scrubbed and soaked overnight. Then she drained the water and poured fresh water. I added the knuckle to the legs and set it to cook. Cooked for 4.5 hours, after which I added carrots, peppers, bay leaves, peppercorns and boiled for another 1.5 hours. Remove the meat from the cooled legs and shanks with a knife and finely chop them. I cut the boiled carrots into rings and placed them on the bottom of the containers. Mixed the meat with chopped garlic and placed it in containers. I salted the broth, strained it and poured it over the meat. I put it in the refrigerator to harden.
