My husband wanted to try cooking pork knuckle in the tandoor. The most suitable recipe turned out to be shank in foil baked in the oven. Moreover, under the recipe the author writes that you can cook this dish on the grill. This was our experiment. I was given half an hour to marinate) Just enough time to cover the shank with marinade and stuff it with garlic. She marinated at room temperature, then wrapped it in foil and gave it to her husband for further cooking. By the way, I added another spoonful of ketchup to the marinade so that the meat marinated faster, and the crust would definitely be golden brown) The shank spent an hour in the tandoor, then the foil was removed and it browned on smoldering coals for another 30 minutes. It turned out great! The meat became very soft and tender and easily separated from the bone. And what a scent! And the garlic smells of smoke) And what I love most about the knuckle is the skin, it just became so ruddy and at the same time soft. The meat tastes great, spicy and slightly spicy. I recommend trying it!
