The presence of lard gives the finished roll juiciness. You can carefully cut off the skin or cook the roll with it. There is no fundamental difference here.

    If the piece of brisket is thick, then cut it along the entire piece without cutting all the way through and open it like a book.

    Season the brisket generously with salt and ground pepper. You can take any spices to your taste.

    Peel the garlic and spread it over the entire surface of the brisket. I have very large garlic cloves, so I cut each one into 2-3 pieces.

    Roll the brisket into a tight roll and wrap tightly with cotton thread.

    Sprinkle the outside of the roll generously with ground paprika and rub it in a little with your hands.

Place the roll in it and place in the oven, preheated to 200 degrees for 1.5 hours. I do not recommend using a ceramic mold for this recipe. At high temperatures it may crack.

For dinner I made a pork belly roll baked in the oven. I had a rather thick piece of brisket, so I didn’t cut it lengthwise all the way. Rub the meat with lard with salt, sprinkle with aromatic mixture of peppers and paprika. I placed garlic slices on top. I rolled the brisket so that the skin was on top and tied it tightly with a string. I also sprinkled paprika on top. Bake for exactly 1.5 hours at 200°C. The aroma is so delicious! I like this roll both hot and cold. A layer of lard adds juiciness to the appetizer. Very tasty, spicy and aromatic!
