    How to make marmalade from plums? To begin, prepare all the necessary ingredients. Choose ripe plums, without spoiled or rotten areas. Be careful when choosing agar-agar. Always check its composition. The composition should contain only agar-agar, without any additives, otherwise there is a high probability that the marmalade will not work. It is best to buy agar-agar in specialized confectionery stores.

    Rinse the plums. Cut the plums in half and remove the pits.

    Place the plums in a thick-bottomed saucepan or wok and pour 250 ml of water over them. Cook the plums over low heat until the fruits are completely softened for 20-30 minutes.

    Once the fruits are soft, remove the pan from the heat, drain the water, and rub the plums through a sieve to make a puree.

    Place the plum puree back into the pan, add 400 grams of sugar, citric acid and cook over low heat for another 30 minutes.

    Pour agar-agar into a bowl or bowl and fill it with 100 ml of water at room temperature. Leave the agar-agar for 15 minutes to swell.

    When the future marmalade has cooled completely, cover the mold with cling film and put it in the refrigerator for two hours. The cling film is needed to prevent the marmalade from absorbing the odors of the refrigerator.

    After two hours, remove the frozen marmalade from the refrigerator. All that remains is to roll the marmalade in sugar (can be replaced with powdered sugar). To do this, sprinkle the table, cutting board or other work surface with sugar. Place a layer of marmalade on the sugar, then turn it over to the other side.

There were a lot of plum trees this year, and I wanted to make something unusual out of them. I liked the recipe for plum marmalade. I had some worries about whether it would work. I already used agar-agar once when making marmalade and marshmallows and it didn’t work out. As it turned out, the agar-agar had the addition of maltodextrin, which did not allow the desired result to be achieved. This time I bought agar-agar at a confectionery store. But still, there was some excitement about the result. But I was worried in vain. The marmalade turned out great. It is not very sweet, its taste has a slight pleasant sourness. The consistency is quite dense. Doesn't melt at room temperature. And it’s easy to prepare, which is good news. I was very pleased, as were my family members. Thanks for the recipe!
