Step-by-step preparation
STEP 1
How to pickle turnips for the winter? Prepare all the necessary ingredients. It is better to pickle turnips during harvest, when the vegetables are fresh, juicy, tasty and contain maximum vitamins.
STEP 2
Wash the root vegetables thoroughly under running water with a brush and dry them from the water. Remove the peel from the turnips. Cut it into slices about 0.5 centimeters thick. It is better to cut the circles into two parts so that they fit well into the jars.
STEP 3
Place the turnip pieces in a deep container, sprinkle the slices with salt and fill with water so that it completely covers the turnips. The cut pieces can be pressed down with pressure, for example, a plate. Leave the turnips in the water overnight.
STEP 4
In the morning, drain the water and rinse the turnip pieces under running water to remove salt. This method of soaking will relieve the root vegetable of its specific taste and bitterness. Set the turnips aside; we'll come back to them in the next steps.
STEP 5
Peel the washed beets and cut into slices or, like turnips, into halves of circles. Sterilize the jars for preparation in advance. Wash small jars in running water and soda. Place the still wet jars in the oven, neck down. Turn on the oven to 160 degrees and sterilize 0.5 liter jars for about 10 minutes. Wash and boil the lids, let dry.
STEP 6
How to make a marinade? Pour water into a saucepan, add salt, bay leaf, peppercorns, and a small piece of hot pepper. Bring to a boil, add vinegar and boil for about 5 minutes. The amount of vinegar should not be reduced, as this can lead to damage to the finished product.
STEP 7
Place pieces of turnips and beets into jars, alternating them with each other. Peel the garlic, wash, dry and add a couple of cloves to the jar. Pour the cooled marinade over the turnips and beets. Close the jars with lids. Place the jars with the preparation in the refrigerator to marinate for a week.
STEP 8
After a week, the workpiece is ready. You can serve turnips to the table or prepare various dishes from them. Bon appetit!
