    Wash 0.5 liter jars with soda, place them wet with the neck down on a wire rack, and sterilize them in the oven at a temperature of about 150 degrees for about 10 minutes. We boil the lids and dry them. The jars can also be sterilized in another convenient way.

    It is better to use rubber gloves when handling hot peppers. Wash the pepper pods thoroughly under running water and dry on a paper towel.

    Let's prepare spices and herbs for pickling hot peppers: garlic, horseradish leaves (you can also use the root), currant leaves, cherries, allspice, peppercorns, bay leaf, cloves, dill umbrella, the set can be changed if desired. Wash the greens thoroughly and dry.

    Place pepper pods in sterile jars, alternating them with herbs and spices. Fill the contents of the jars with boiling water, but it is better to pour boiling water in small portions, for example, with a spoon, so that the jars do not burst. Cover the jars with lids and leave for 5 minutes.

    Then we pour the water from the jars into a saucepan; it is better to use a special lid with holes so that the spices and peppers do not fall out of the jar. Add sugar and salt, bring to a boil, stir until they are completely dissolved.

    Pour the boiling marinade over the peppers in the jars up to the hangers of the jars. Leave it covered again for 5 minutes and pour it into the pan. Turn on the heat, bring the marinade to a boil, add vinegar, stir. Turn off the heat. Pour the marinade over the peppers in the jars. We roll up the jars with lids and put them under a warm blanket until they cool completely at room temperature.

I prepared pickled hot peppers for the winter for my husband, a big fan of spicy things. They are easy to prepare and surprisingly quick. To be honest, I didn’t weigh the peppers, so I don’t know how much they weighed. I made enough for two 800 gram jars. It took me about 720 ml of water. If I describe the taste of the resulting peppers, the only words that come to my mind are “hellish hell.” I once had the opportunity to try olives stuffed with hot peppers. They were spicy, but not as hot as these peppers. I tried a piece, and for another 20 minutes my tongue burned from the spiciness. Perhaps it’s just the variety, although I won’t say that these peppers were too hot when fresh. Even for my husband they were too hot. But I think that as an addition to food, these peppers will be ideal as a spice. Thanks for the recipe!
