STEP 1
How to make pears and apples for the winter? Prepare all the necessary ingredients. Rinse apples and pears well in running water to remove dirt. Try to choose strong fruits without damage. If the fruits are soft, then during cooking they will completely disintegrate into puree. Take the most aromatic pears. STEP 2
Peel washed apples and pears, cut into 4 parts and remove the core. Then cut all the pieces into cubes.
STEP 3
Place the chopped fruit in the prepared pan. Take an enamel, glass or stainless steel pan. Do not use aluminum to prevent the fruit from oxidizing. Read more about choosing a pan in a separate article. There is a link to it at the end of this recipe.
STEP 4
Sprinkle the prepared fruits with sugar. It is better not to add all the sugar at once. Focus on the sweetness of the fruit - it is always different! If you over-sweet, you won’t be able to fix it later. Leave the covered fruits to stand for several hours at room temperature so that they release the juice.
STEP 5
A sufficient amount of juice will be released from the fruit. Place the pan on the fire and bring the mixture to a boil. Boil for a couple of minutes and turn off. Cover with a lid and cool completely.
STEP 6
Then bring to a boil again, add a little citric acid. Why add citric acid? It serves as a preservative and prevents sugaring. Boil for a couple more minutes. Double cooking with intermediate cooling makes the syrup thicker and does not boil all the vitamins out of the fruit, as if you cook them for a long time. In this case, the pieces of fruit remain intact.
STEP 7
Sterilize the prepared jars in any way convenient for you. You can choose the appropriate sterilization method by reading the article at the end of the recipe. Pour boiling fruit into jars and close the lids. I usually just pour boiling water over the lids. Turn the jars upside down, wrap them in a blanket and cool completely. In this wrapped form, the jars will cool very slowly and, so to speak, reach the desired condition. The syrup will become thicker and the fruits will be softer.
STEP 8
In winter, it is very pleasant to open such a jar of pear and apple jam for the winter. Bon appetit!
