If you over-sweet, you won’t be able to fix it later. Leave the covered fruits to stand for several hours at room temperature so that they release the juice.

    A sufficient amount of juice will be released from the fruit. Place the pan on the fire and bring the mixture to a boil. Boil for a couple of minutes and turn off. Cover with a lid and cool completely.

    Then bring to a boil again, add a little citric acid. Why add citric acid? It serves as a preservative and prevents sugaring. Boil for a couple more minutes. Double cooking with intermediate cooling makes the syrup thicker and does not boil all the vitamins out of the fruit, as if you cook them for a long time. In this case, the pieces of fruit remain intact.

Pour boiling fruit into jars and close the lids. I usually just pour boiling water over the lids. Turn the jars upside down, wrap them in a blanket and cool completely. In this wrapped form, the jars will cool very slowly and, so to speak, reach the desired condition. The syrup will become thicker and the fruits will be softer.

I still had a few pears and apples that no one wanted to eat anymore. I found a recipe for pears and apples for the winter on the website and made some jam. It’s very convenient that you can set the number of servings even with tenths) I left the fruit with sugar until the juice released, and then cooked it a little. In the morning, brought it to a boil again and cooked over low heat until slightly transparent and thickened. Instead of citric acid, I added half a teaspoon of lemon juice. This is more for taste than storage. Of course, I didn’t close it for the winter. We ate this tasty and aromatic jam in a couple of days. It turned out sweet with a slight lemon flavor.
