    For the recipe you will need pears, sugar, water and citric acid. For jam, it is recommended to select strong pears. Medium and small pears are boiled whole, and large ones are cut into 2 cm thick slices or in half.

    Pears should be washed, dried and cored and peeled. Next, they should be cut into slices.

    Place the slices in a saucepan and add water, and cook them until they become soft.

    Next, you need to prepare a syrup from sugar and water (use the water from boiling the pears).

    Then put the pears into the already hot syrup and cook them until fully cooked over low heat. Before finishing cooking, you need to add citric acid so that the pear jam can be candied. If desired, at this stage you can add a few sprigs of cloves and/or cinnamon (about 15 sprigs of cloves per 1 kg of pears and 2 tsp of cinnamon) to taste.

    The jam is ready! It can be consumed immediately when it cools down. Or pour hot pear jam into sterile jars, which then need to be rolled up and turned over.

This is one of our family's favorite types of jam. I just cook it a little differently. For this jam I take lemon pears. I fill the fruits prepared in advance with syrup and let them stand for 10-15 hours. Then I cook in 2-3 batches with a break of a day. The pear pieces turn out transparent, and the syrup itself is amber, like honey.
