    First prepare the marinade. For this we need one apple. Peel it and remove seeds and cut it into pieces. Grind the apple with an immersion blender until pureed. You can grate the apple on a fine grater.

    Wash the rosemary sprig and tear off the leaves. Fresh rosemary can be replaced with dry rosemary.

    In a suitable sized bowl, combine applesauce, paprika, coriander, and olive oil. Add salt, rosemary leaves, ground black pepper, mix well. If the pork is fattier, reduce the amount of olive oil to 2 tablespoons.

    Wash the pork and dry it with paper towels. Make transverse cuts in the meat at a distance of 1 cm from each other and without cutting to the bottom about 1 cm.

    Rub the meat on all sides and in the pockets with the apple marinade. Cover the meat with cling film and leave to marinate in the refrigerator for 4-5 hours, preferably overnight. The longer the marinating lasts, the tastier the finished dish will be.

    Cut the remaining apples in half and remove seeds. Cut the apples into slices at least 0.5 cm thick. Do not cut the apples too thin so that they retain their shape when baked.

    Place the marinated meat in a baking dish. Place 2 apple slices into each pocket. You can also place apple slices between the meat and the edges of the mold. Then the meat will not stick to the pan during cooking.

    Bake the meat in an oven preheated to 180-190C for about 1 hour. Then remove the foil and bake for another 25 minutes until golden brown on top. You can check the readiness of the meat with a knife; it should be soft. Cooking times may differ from those indicated, as they depend on the operating characteristics of the oven. Based on this, adjust the temperature and baking time based on your oven.
