STEP 1

How to make a no-bake roll from cookies and cottage cheese with tangerines? Prepare your food. Any cookie will do - shortbread, sugar, biscuit, even oatmeal. The main thing is that it crumbles well. Take ripe, yellow, fragrant bananas. Tangerines are seedless and not very large in size.
STEP 2

First of all, prepare the base for the roll. Grind the cookies to medium crumbs. This can be done in any way - run it through a meat grinder, in a blender, or roll it with a rolling pin, after putting it in a bag. Do not try to grind the cookies into dust; it is better if small crumbs remain - then the base of the roll will be more stable.
STEP 3

Peel the bananas and break them into a bowl. Puree them with an immersion blender until pureed. You can use a fork or masher, whichever you prefer.
STEP 4

Sift cocoa powder into banana puree. Stir.
STEP 5

Add cookie crumbs to bananas. Using a spoon, knead the mixture until smooth. If it turns out too soft, add more cookies. This will depend on the size and ripeness of the bananas. It took me a little more cookies.
STEP 6

Prepare the filling. Place the cottage cheese in another bowl, add soft butter (to do this, remove it from the refrigerator in advance). Instead of butter, you can use coconut oil. Cottage cheese is suitable for any fat content. Add sugar (you can replace it with honey). Beat the cottage cheese with additives in a blender until a homogeneous plastic mass is obtained. If you initially had soft cottage cheese, you can simply stir it or beat it with a mixer.
STEP 7

All that remains is to form the roll. Place a piece of parchment on the table and cling film on it. Place the cookie mixture on the film and roll it into a rectangular layer with a rolling pin. Make its size based on the number and size of tangerines. The thickness should be about 1cm.
STEP 8

Spread the cottage cheese filling on top.
STEP 9

Wash and peel the tangerines. Place them on one edge of the roll, stepping back slightly from the edge. Place the tangerines on their side so that you get a beautiful cut when slicing.
STEP 10

Carefully roll the filling into a roll. Wrap the roll first with film, then with paper. Place it in the refrigerator for 2 hours to stabilize.
STEP 11

Serve the roll to the table, cutting into portions. Try to cut according to tangerines, then the pieces will turn out beautiful when cut. Bon appetit!
