  1. STEP 1

    STEP 1

How to bake young potatoes in the oven in wedges? Prepare everything you need. Wash the new potatoes thoroughly with a sponge or brush, then rinse under running water and dry with a kitchen towel or paper napkins. To ensure that the potatoes bake evenly in the oven, it is better to choose tubers of the same size. Cut each potato into 4 wedges.

  2. STEP 2

    STEP 2

How to make sauce for new potatoes with skins? Wash the tomato under running water, cut into two parts. Grate each half on a coarse grater. Throw away the skin.

  3. STEP 3

    STEP 3

Add a pinch of salt, olive oil, dried basil or oregano, some ground pepper and dry garlic to the tomato. Mix everything very well. At this stage, you can add your favorite seasonings and spices; adjust their quantity to your taste. The sauce is ready.

  4. STEP 4

    STEP 4

Dip each potato wedge in tomato sauce. Or, for convenience, you can put the potatoes in a plastic bag, add tomato sauce, and then mix everything in the bag, moving it from one hand to the other. Potatoes should not be left to marinate; they should be cooked immediately.

  5. STEP 5

    STEP 5

Line a baking tray with baking paper or grease it well with vegetable oil using a silicone brush. Place the potato wedges on the side, cut side down, so that the fragrant skin is on top (as in the photo).

  6. STEP 6

    STEP 6

Cover the baking sheet with foil and place the potatoes in the preheated oven. Bake at a temperature of 180-200 degrees, “top-bottom” mode for about 20 minutes. Time and temperature are approximate, be guided by the operating characteristics of your oven. Read more about this in the article at the link below the steps.

  7. STEP 7

    STEP 7

Next, remove the foil and change the oven mode to “convection” or “grill” so that golden brown sides are formed on the potatoes. Bake for about 20-25 minutes (cooking time may increase or, on the contrary, decrease, it depends on the capabilities of your oven and the type of potato). You can check the readiness of the potatoes using a toothpick.

  8. STEP 8

    STEP 8

Sprinkle the finished delicious slices of oven-baked new potatoes with allspice and chopped fresh herbs if desired.

As an option, I will offer a recipe for cooking new potatoes. Idaho potatoes baked with garlic and paprika. Fragrant and appetizing.

I wanted a baked potato. I liked the recipe “new potatoes in skins in the oven.” But since it’s not the season now, I didn’t use young potatoes. Instead of tomato I used tomato ketchup. For spices, I chose potato seasoning and ground sweet paprika. I washed the potato tubers well and cut them into 4 pieces. Mixed everything for the marinade. Carefully dip the potato wedges into the marinade. I laid it out on the deco and sprinkled it with oil to prevent the potatoes from drying out. Cooked for 25 minutes with foil and 20 minutes without foil. The potatoes in their skins turned out incredibly tender, soft and flavorful. This is a wonderful side dish, but you can just enjoy the potatoes by adding sauce. Potato wedges conquered everyone! It's so delicious that you can't stop eating it. Excellent recipe!
