Muffins with cottage cheese and kefir

Delicious muffins with the most delicate consistency, ideal for coffee and tea. I can't even name a food tastier than cottage cheese muffins. They are good just like that, with coffee, or as a dessert. If it weren't for the diet, I would eat muffins with cottage cheese all the time. I would add fruits, chocolate, nuts and other favorite toppings to them. If you love muffins as much as I do, try my recipe. But first, stock up on special molds for muffins or small cupcakes.

  1. STEP 1

    STEP 1

How to bake cottage cheese muffins with kefir? Prepare your ingredients.

  2. STEP 2

    STEP 2

First I do the filling. Of course, the filling in the muffins will be cottage cheese. It needs to be ground on a large sieve and mixed with vanilla and sugar. The filling must be thoroughly mixed so that the cottage cheese turns into a creamy mass. I always add vanilla to the filling, but this is a matter of taste. The main thing is not to overdo it.

  3. STEP 3

    STEP 3

Set the filling aside. Now I start the test. I sift the flour and immediately add the baking powder. Then I break the egg, grind it with sugar and, stirring constantly, add butter.

  4. STEP 4

    STEP 4

If there is no vegetable oil on hand, then I melt the butter and add it to the egg and sugar.

  5. STEP 5

    STEP 5

When the egg mass has become homogeneous, add kefir and, stirring constantly, add flour with baking powder and cocoa powder.

  6. STEP 6

    STEP 6

Preheat the oven to 180 degrees in advance (10-20 minutes). Now you can put the dough into molds and put the curd filling on top. I don't recommend pouring out all the dough.

  7. STEP 7

    STEP 7

I pour half of it into the molds, then put the cottage cheese filling and pour the remaining half of the dough on top.

  8. STEP 8

    STEP 8

It is better to fill the molds two-thirds full, as the dough will rise. Place the molds in the preheated oven.

  9. STEP 9

    STEP 9

After half an hour, you can remove the muffins from the oven and dip the tops into melted chocolate, or you can sprinkle the muffins with powdered sugar.

  10. STEP 10

    STEP 10

Please note that baking times and temperatures are approximate, use your oven as a guide. Bon appetit!

For some reason they didn’t rise for me. I made it strictly according to the recipe. It turned out very tender and tasty. But the dough is not what I would like. Maybe because it's vegetable oil. I'll try it again with butter.
