Milk flatbreads in a frying pan

STEP 1

How to make milk cakes in a frying pan? Prepare all the necessary ingredients. Heat the milk to 40 degrees (it feels like “pleasantly warm”), add all the sugar and yeast. Leave the dough in a warm place for 15 minutes. I leave it in the microwave, in which I have just heated half a glass of plain water. A lush yeast cap should form on the surface of the milk, which means everything is going as it should. If not, you will have to use a different yeast.
STEP 2

Add soft butter, salt to a bowl with the dough and sift in some of the premium wheat flour. Remove the butter from the refrigerator in advance (about two hours before starting cooking) or keep it in a water bath or in the microwave for a while.
STEP 3

First add most of the flour, mix, and then adjust the amount depending on the properties of the gluten, because flour from all manufacturers is different and you may need less or more.
STEP 4

Beat in the chicken egg and add flour again. Add flour in batches until the dough is smooth and just slightly sticks to your hands. The main thing is not to fill the dough with flour, this will not benefit any baking. Before using, wash the egg in warm water and soda, as there may be harmful bacteria on its surface.
STEP 5

Gather the dough into a ball, cover the bowl with a towel and leave to rise in a warm place for 1-1.5 hours.
STEP 6

This is how my dough came up, it doubled in size. Grease your hands with sunflower oil and transfer the dough to a work surface.
STEP 7

Using a knife, cut the ball into eight equal segments.
STEP 8

Dust your work surface with flour. Collect each segment into a ball.
STEP 9

Using a rolling pin, roll the ball into a flat cake no more than two millimeters high and about 15 cm in diameter. Use a knife to make cuts over the entire surface. This will prevent the cake from rising in one bubble when frying. Don't worry, there will be no through cuts on the finished tortillas.
STEP 10

Heat a frying pan, add half a teaspoon of sunflower oil and heat it up. Place the tortilla in the pan and fry for about two minutes over medium heat until golden brown. Then flip the tortilla over and cook for another two minutes until cooked through. While one tortilla is baking, roll out the next one. But don't forget to keep an eye on the one in the pan! It should not burn. Place the finished cakes in a frying pan with yeast and serve!
