Meat with eggplants and zucchini is prepared from available ingredients, especially during the vegetable season, and the resulting dish is excellent in all respects - thick, with aromatic sauce. The beef turns out soft, and the vegetables give juice. Great combination!

Step-by-step preparation
STEP 1

How to make meat with eggplants and zucchini? Wash the beef pulp and dry it with a paper towel. Cut the meat into portions.
STEP 2

Heat a deep frying pan over high heat. Pour in sunflower oil. Warm it up. Place the meat to fry. The beef should be browned on all sides. As soon as this happens, add tomato paste, a little water and simmer the meat under the lid until soft. It took me about an hour.
STEP 3

Wash the eggplant and chop it into medium-sized cubes.
STEP 4

Wash the zucchini and cut into cubes.
STEP 5

I also have yellow zucchini. I do the same with him.
STEP 6

Add the vegetables to the skillet with the beef. Add salt and pepper to taste, stir. Simmer the dish until the vegetables are ready without a lid, adjusting the desired amount of sauce by evaporation.
