  1. STEP 1

    STEP 1

How to make homemade marzipan? Prepare all ingredients. Please note that you may need a little more water for marzipan (boil a small amount separately and cool), as well as powdered sugar for dusting.

  2. STEP 2

    STEP 2

First, boil the water for cooking the almonds, put the almonds in boiling water and cook for 1-2 minutes. Then the grains need to be cleaned. The grains will peel easily; if you press on the kernel, the skin will come off the nut.

  3. STEP 3

    STEP 3

Rinse the peeled almond kernels in a colander, let drain and dry in a frying pan for 2 minutes, stirring constantly. Under no circumstances should the nuts be toasted!

  4. STEP 4

    STEP 4

Grind the almonds in a blender until the consistency resembles thick semolina porridge.

  5. STEP 5

    STEP 5

Now let’s make the syrup: add water to the sugar and let it cook, stirring occasionally. Be careful not to let the syrup turn into caramel!

  6. STEP 6

    STEP 6

The density of the syrup should be such that if we take a drop of syrup in our hands, it can be rolled into a soft ball. Add almonds to syrup. Cook, stirring, for another 2-3 minutes over low heat. Remove from heat, let the mixture cool slightly, drop almond essence into it and mix again in a blender.

  7. STEP 7

    STEP 7

The result should be a soft, elastic mass that can be easily cut and take any shape. Sprinkle the cutting board with powdered sugar. Place the almond mixture on it and roll it out with a rolling pin to the required thickness. If your marzipan crumbles, add a little water, in small portions, until elasticity is achieved. If, on the contrary, the marzipan is a little runny and doesn’t mold well, then you need to thicken the mass to the desired consistency with powdered sugar.

  8. STEP 8

    STEP 8

In this form, marzipan can be used as a filling for baked goods or simply as candy. To make decorations out of marzipan, food coloring is added. Squeeze a little paint onto the marzipan and knead it with your hands until the entire piece is evenly colored.

Recently my husband brought home marzipan sweets. After drinking tea with them, I became very interested in whether it was possible to make marzipan at home. All I knew about it was that marzipan is made from almonds. This is where my knowledge ended. I decided to look on the website to see if it was possible to make marzipan, and found this recipe. I bought raw almonds especially for marzipan, and instead of almond extract, almond syrup. I did everything according to the recipe. The skins of boiled nuts can be easily removed. To be honest, I didn’t even expect it to be so simple. I boiled the syrup for about 7 minutes until a drop of syrup became a ball in cold water. After adding chopped almonds, the mixture immediately became thick. After heating the mixture for another half a minute, I turned off the heat. Added one teaspoon of almond syrup. The mixture crushed in a blender turned out to be rather dry. So to make it more elastic, I added a little water. I rolled candy balls from the almond mass and dipped each one into melted chocolate. The marzipan turned out very tasty and tender. For more flavor, more almond syrup could be added. It is flexible and holds its shape perfectly. It turned out that making it is not at all difficult. I will use this recipe again. Thank you very much!

Astrid, what great sweets you turned out! Marzipan is also good to use as mastic and to decorate confectionery products. I always answer the question “what do you want” - “marzipan” I answer. By the way, I often hear this from friends too. And they answered me - “there is no marzipan.” So let's do them ourselves! Here is the recipe! Thank you very much, Astrid!

The word almond has fascinated me since childhood (even though I’m over 50), I love this taste and am very happy with such a sweet recipe. An amazing delicacy......and also surprisingly unfair...134 people took this recipe for themselves and no one said a single kind word. HORROR! I’m correcting myself – I saw Irochkin’s comment (although the number of comments is still 0) A wonderful site and wonderful recipes, I’m sure the people on the site are wonderful, so let’s not be shy to write comments. There are a lot of good, warm and encouraging words in the world.

Thank you very much for the recipe. Finally I decided to try making marzipan. Everything in your recipe is so detailed! I have another question for you: is it possible to store ready-made marzipan? If yes, what is the best way to do this?

Hello! It didn’t work for me ((I added water, it still crumbles. Should I have added more water and then tried cooking? Or with the stove turned off? Or maybe I didn’t cook the syrup enough? What could be the problem?
