Lobio with meat

Step-by-step preparation
STEP 1
How to make lobio with meat? Prepare all the necessary ingredients. You will need boneless beef. I used meat from the shoulder blade. The amount of garlic can be adjusted to your taste. Also take your choice of greens. I have parsley and dill.
STEP 2
Rinse the red beans thoroughly and soak them in clean cold water for about 4-5 hours, or preferably overnight. Soaking will significantly reduce the cooking time. After the specified time, rinse the beans again, put them in a saucepan and cover with water. Cook the beans over medium heat until fully cooked, about an hour.
STEP 3
While the beans are cooking, you can start cooking the meat. Rinse the beef fillet under running water and dry with paper towels. Cut the meat into medium-sized pieces.
STEP 4
Place the pieces of beef in a deep frying pan (I use cast iron) and place it over medium heat. As soon as the meat is hot, pour some water into the pan, reduce the heat and simmer the beef, covered, for half an hour, stirring occasionally.
STEP 5
Peel the onion, rinse under cold water so that when cutting it does not sting your eyes, and cut into small cubes. Then add it to the beef in the pan and continue to simmer.
STEP 6
Add the chopped onion to the beef in the frying pan and continue to simmer.
STEP 7
Wash the tomato, make a cross-shaped cut on it and place in boiling water for 1-2 minutes. This will make it easy to remove the skin from the tomato. Cut the blanched tomato into small cubes.
STEP 8
Place the chopped tomato in the frying pan with the meat and stir.
STEP 9
Peel the garlic cloves and chop them finely. Place the chopped garlic in the pan. Simmer everything together for about 10-15 minutes.
STEP 10
If necessary, drain the remaining water from the finished beans and place them in the frying pan with the meat. Add salt and pepper to taste and stir. Simmer for about 5 minutes and remove the pan from the heat. Leave the lobio for 15-20 minutes to steep.
STEP 11
Place the finished bean lobio with meat on plates and sprinkle with finely chopped herbs. Bon appetit!
