Lenten pea soup

An affordable, easy vegetarian soup for fasting days! Lenten pea soup is the most important, if not basic, dish of the Lenten period. Rich in vegetable protein, the soup is perfectly filling, is a complete meal in its own right and is an ideal option for a Lenten lunch. The key point of pea soups, boiling the peas, is easily resolved by pouring boiling water over the peas. This way the thin shell is destroyed and the peas are perfectly boiled, no matter how fresh they are. The result is a uniform thick velvety consistency!

  1. STEP 1

    STEP 1

How to cook lean peas? Prepare peas, potatoes, carrots, onions, vegetable oil (since the dish is lean, we exclude butter or ghee). You will also need some salt, spices and fresh herbs.

  2. STEP 2

    STEP 2

To ensure that the peas are cooked perfectly and the soup turns out delicious, there is a little secret to starting the preparation of lean pea soup. Pour the dry peas (no need to soak) with a small amount of BOILING water. Add a little salt, ground cinnamon on the tip of a knife, bay leaf and a little vegetable oil. Bring to a boil and cook until the peas swell, then add water to the desired amount. This way you don’t have to stand at the stove, constantly skimming foam.

  3. STEP 3

    STEP 3

While the peas are cooking, peel the carrots and onions. Grate the carrots on a coarse grater, finely chop the onion into pieces of arbitrary shape. Heat vegetable oil with spices (curry, turmeric, ground black pepper, paprika), add chopped onions and carrots. Sauté vegetables until soft.

  4. STEP 4

    STEP 4

Potatoes must be thoroughly washed, peeled and cut into small cubes. When the peas are almost ready, add the chopped potatoes to the soup. Add salt to taste. Cook until the potatoes are fully cooked. Stir the soup periodically so that the boiled peas settle to the bottom and do not burn and stick to the bottom.

  5. STEP 5

    STEP 5

At the end of cooking, add fried carrots and onions to the lean pea soup, as well as some chopped fresh herbs.

The soup is excellent, thank you. There is also a version of Indian pea soup without meat. The range of spices and ingredients is amazing.

Lately, I have been faced with the task of not only feeding my family, but also figuring out what to cook for my husband. I even created separate folders in my Recipe Saver) Very convenient, by the way) I chose a recipe for Lenten pea soup from the “lenten” folder. My husband loves legumes, especially since peas contain a lot of protein, which replaces meat. I really liked the way of preparing the most important ingredient. Indeed, after scalding with boiling water, the peas foamed less and cooked faster. True, it didn’t boil much, it remained in halves, but this is that kind) After the peas became soft, I added hot water to the pan, brought to a boil and added the potatoes. Well, then fry it. The spices I used were turmeric, curry, dried dill and black pepper; I think this is an ideal addition to pea soup) The soup turned out to be a rich golden color thanks to the spices and carrots fried in oil. It is also filling and very tasty! Besides my husband, my daughter also enjoyed eating it, and this is an indicator)
