    How to cook jalebi? Prepare the products according to the list. Take the highest grade flour. Try to keep all products at the same temperature, room temperature. Sift the flour through a fine sieve in advance. It is better to use the finest semolina, bottled or filtered water.

    Pour wheat flour into a suitable sized container. Add semolina and baking powder to it. Mix gently, being careful not to stir up any flour dust.

    Add sour cream to the dry flour mixture.

    Pour in water and start kneading the dough. It should turn out liquid, but a little thicker than pancake. Try not to pour in all the water, do it in parts, because you may need more or less water than I did (it depends on the flour).

    Leave the finished dough in a warm place overnight or for at least 2 hours.

    Start preparing the syrup.

    Pour water into the pan and add sugar. Turn the stove on low heat.

    Stir the water until the sugar is completely dissolved. Bring the sugar syrup to a boil. Pour in lemon juice and cook for another 1-2 minutes. Let the syrup cool slightly.

    Pour the finished dough into a pastry bag or a regular tight bag. For the bag, use a nozzle with a narrow hole, and just cut off the corner of the bag.

    Heat vegetable oil in a frying pan. The oil level should be about 3-4 cm. Squeeze the dough from the bag into the hot oil in the shape of spirals. Fry on both sides until golden brown.

    Remove the cooked jalebis from the oil with a slotted spoon. Let the excess oil drip off and place the jalebis in the cooled sugar syrup for 5 seconds.

Once my husband and I were lucky to visit India, and it was there, in one of the restaurants, that I tried the classic delicacy jalebi! But when I arrived home, I wanted to do a lot of experiments with this food. So, I learned that jalebi can be made spicy. To do this, I don’t prepare syrup, but mix tomato paste or ketchup with spices and pepper, heat it in a frying pan and, instead of dipping it in syrup, at the last stage, dip it in the prepared mixture. Try it, it's very tasty!
