Pour water into a dry, clean Turk.

Measure out the coffee.

Add coffee to water.

Stir until smooth.

Add sugar. At this point, if desired, you can add spices - cinnamon, pepper, cardamom...

Stir.

Place the Turk on the stove.

Cook until foamy, and when it reaches the top edge, remove the Turk from the heat.
STEP 9

Pour some of the foam into a cup and return to the stove. Wait for the foam to form, then pour some of the foam into the cup again.
STEP 10

Return the Turk to the stove, wait for foam, remove from the stove, leave the Turk for 2 minutes to allow sediment to settle.
STEP 11

Pour the coffee into the cup without stirring it.
STEP 12

Coffee is served with a cup of water to wash it down. So every sip of coffee is like the first.
