STEP 1

How to prepare hot peppers and garlic for the winter? Prepare the ingredients according to the list. In addition to these products, you can use a variety of herbs and seasonings. For example, fenugreek, fennel seeds, saffron, suneli hops are often added, but this is a matter of taste. It's okay if the pepper is a little wilted and wrinkled. On the contrary, if the pepper is fleshy and juicy, it needs to be dried a little. The workpiece should be without excess liquid.
STEP 2

Rinse the hot pepper pods thoroughly; it is better to do this with gloves, because you can burn your skin. Place the peppers in a colander and let the water drain from them. Cut the pepper pods into two parts, remove the stalk with seeds. The pulp can be cut into several pieces.

Peel the garlic cloves and cut them into several pieces.
STEP 4

Place the pulp of the hot pepper pods in a blender bowl and grind it. If you don’t have a blender, you can use a meat grinder or other available electrical appliance with similar functions.
STEP 5

Place the garlic in a blender bowl with the hot pepper. Grind everything together again.
STEP 6

Add sugar, salt, you can add a pinch of ground coriander or other spices for flavor. Grind everything again until a homogeneous mass is obtained and the bulk ingredients are dissolved.
STEP 7

Adding vinegar or sterilizing the product is not required here. Place the peppers in small, washed and sterilized jars, close them with sterile lids and store them in the refrigerator. The ingredients themselves are good preservatives and will not allow the finished product to deteriorate if stored correctly.
STEP 8

Hot peppers with garlic will last quite a long time in the refrigerator. In winter, it can be used to prepare sauces for meat and other dishes. Bon appetit!
