STEP 1

How to make honeysuckle for the winter? Prepare everything you need. First, sterilize the jars. Rinse them with baking soda under running water. Place the jars wet in a cold oven, neck down, and also place the washed lids. Turn on at 150 °C, after reaching the set temperature, sterilize 0.7l jars - 8 minutes, 1l - 15 minutes, 2l - 20, 3l - 25 minutes. If desired, you can sterilize the jars over steam or in the microwave.
STEP 2

Both fresh and frozen berries are suitable for this recipe. Preference is, of course, fresh during the harvest season. In Siberia, any berry is often frozen, and then you can cook a lot of things from it. I just took the frozen one and while I was cooking there was a wonderful aroma of fresh berries.
STEP 3

Sort fresh honeysuckle from branches and leaves, remove spoiled berries. Rinse well under running water and let the water drain. Frozen berries just need to be washed with cold water and allowed to drain, because the berries have already been prepared. Many people recommend drying it, but I do this only before freezing, now there is no need for this.
STEP 4

Immediately transfer the berries into a blender bowl, add a little sugar and pulse with short bursts.
STEP 5

Honeysuckle will release juice, which is what we need.
STEP 6

Now add sugar in several stages and scroll each time. If there are a lot of berries, divide them into several parts, scroll each separately. Place the already rolled berries into a spacious bowl and then mix everything, or use an immersion blender or a large stationary blender, whichever is more convenient for you.
STEP 7

Honeysuckle has a fairly hard skin, so the finished puree has a heterogeneous structure with fragments of pulp and skin. Leave the puree on the table for 15 minutes until the sugar is completely dissolved, then pour into sterilized jars and screw. Our preparation of honeysuckle for the winter without cooking is ready. Store in the refrigerator. Honeysuckle with sugar can also be poured into disposable 200 ml rectangular containers and stored in the freezer.
