Homemade noodles for lagman

STEP 1

First, knead the dough from wheat flour, vegetable oil, water and salt.
STEP 2

You need to give it a lot of effort to make the dough elastic. To do this, knead for at least ten minutes. Then place in a bowl, cover with a napkin and leave in a warm place for an hour.
STEP 3

After one hour, start kneading the dough, after greasing the surface of the table and your hands with vegetable oil. Afterwards, divide the dough into four equal parts and roll each into a “sausage”. We wrap the “sausages” in the shape of a snail’s house, cover with a napkin and keep for about ten minutes.
STEP 4

Now we begin to carefully roll out each set aside “snail” with our hands on the table, making it thinner. We need to ensure that its diameter does not exceed five millimeters (less can be done if possible). Immediately place a pan of salted water on the stove for the noodles.
STEP 5

Now the most important thing: we take the elongated noodles with two fingers on the left and right and, like threads, we wind them between our arms extended shoulder-width apart. We will get such a skein of noodles. We slam it on the table several times (holding it with both hands).
STEP 6

Place in boiling water to cook for seven minutes. Then everything is the same as when cooking pasta. Let it boil, stirring, cook until tender.
STEP 7

Drain through a colander. Place separately and drizzle with oil to prevent the noodles from sticking together.
STEP 8

Now you just need to put the lagman noodles in the original dish. Bon appetit!
