STEP 1

How to make homemade diet mayonnaise? Prepare your food. Boil the eggs in advance and cool. Sour cream is suitable for any fat content, just keep in mind that the more it is, the higher the calorie content of the sauce. First of all, take mustard that is tasty; I wouldn’t recommend taking it too spicy. I used olive oil, but any vegetable oil will do, again, choose to your taste.
STEP 2

Peel the hard-boiled eggs, break them in half and remove the yolks. Proteins are not useful for making mayonnaise; you can use them in other dishes, for example, in salads. Place the yolks in a bowl and mash them with a fork. You should get fine crumbs.
STEP 3

Squeeze a little juice from the lemon. Try to do this carefully so that no seeds get into the juice.
STEP 4

Add lemon juice, mustard to the mashed yolks, pour in the oil. Vary the amount of lemon and mustard according to your taste; you can reduce them or, conversely, increase them. Then try the prepared mayonnaise and add whatever you think is necessary.
STEP 5

Mix the yolks thoroughly with the other ingredients, trying to remove all the lumps - the better you do this, the more homogeneous the sauce will be.
STEP 6

Add sour cream to the yolk base and stir until a smooth, silky sauce is obtained. Salt and pepper it to taste.
STEP 7

Lightly whisk the mayonnaise with a whisk. The consistency will be like thick sour cream.
STEP 8

The sauce is ready, you can use it to dress salads or serve with other dishes. Bon appetit!
