  1. STEP 1

    STEP 1

To prepare cottage cheese ice cream with honeysuckle berries you will need: cottage cheese, honeysuckle berries, sugar, cream, lemon balm leaves.

  2. STEP 2

    STEP 2

For homemade ice cream, it is better to use soft, non-hard cottage cheese. Grind the cottage cheese in a blender along with the cream.

  3. STEP 3

    STEP 3

We get a smooth curd mass.

  4. STEP 4

    STEP 4

We sort out the honeysuckle berries as necessary, wash them, and dry them well. Add berries to the grated cottage cheese, add sugar.

  5. STEP 5

    STEP 5

    Grind everything until smooth.

  6. STEP 6

    STEP 6

Transfer the curd and berry mass into a container and place it in the freezer.

  7. STEP 7

    STEP 7

After 1 hour, take out the ice cream and mix. This is necessary so that the ice cream hardens evenly and ice crystals do not form in it. After that, put the ice cream back in the freezer.

  8. STEP 8

    STEP 8

We repeat this 2 more times. As a result, the ice cream structure is moderately frozen and can be easily spread with a spoon. If you want to get more frozen, hard ice cream, then the freezing time needs to be increased by another 40-50 minutes.

  9. STEP 9

    STEP 9

Place the dessert in bowls, garnish with lemon balm or mint leaves and serve. Bon appetit!

I wanted to make homemade ice cream for the children, but without heavy cream and condensed milk. I was looking for something lighter and more dietary. Homemade cottage cheese ice cream with honeysuckle berries turned out to be a suitable option. The only thing is that my honeysuckle does not want to bear fruit, and this berry is not on sale. It’s good that the recipe indicates that you can use other berries) Nowadays, raspberries are the most accessible, and besides, this berry is tender, aromatic and easily crushed. Therefore, the choice fell on her, may the author forgive me. My cottage cheese was grainy, so I whipped it for a long time. To speed up the process, I whisked all the ingredients at once. The mass turned out thick and almost smooth. I froze the ice cream for two hours, stirring it every half hour. It didn’t harden much, and I didn’t need a solid consistency. The kids loved the soft serve ice cream and so did I. I used to think that nothing like this could be made from cottage cheese, now I know that you can get delicious homemade ice cream) The recipe is excellent, thank you! I will continue to get fruit from my honeysuckle bush))

Very interesting recipe, thanks! Honeysuckle is such a tasty berry, but it is often unfairly forgotten.
