STEP 1

To prepare cottage cheese ice cream with honeysuckle berries you will need: cottage cheese, honeysuckle berries, sugar, cream, lemon balm leaves.
STEP 2

For homemade ice cream, it is better to use soft, non-hard cottage cheese. Grind the cottage cheese in a blender along with the cream.
STEP 3

We get a smooth curd mass.
STEP 4

We sort out the honeysuckle berries as necessary, wash them, and dry them well. Add berries to the grated cottage cheese, add sugar.
STEP 5

Grind everything until smooth.
STEP 6

Transfer the curd and berry mass into a container and place it in the freezer.
STEP 7

After 1 hour, take out the ice cream and mix. This is necessary so that the ice cream hardens evenly and ice crystals do not form in it. After that, put the ice cream back in the freezer.
STEP 8

We repeat this 2 more times. As a result, the ice cream structure is moderately frozen and can be easily spread with a spoon. If you want to get more frozen, hard ice cream, then the freezing time needs to be increased by another 40-50 minutes.
STEP 9

Place the dessert in bowls, garnish with lemon balm or mint leaves and serve. Bon appetit!
