    Place the mixture in a draft-free place that is warm but not hot. I place it in the corner on a wooden board and cover it with a towel. It is important that the mixture is not shaken, so keep it away from children.

    We need this result. In 4-7 hours the mixture will become slightly jelly-like and slightly hard. I moved it slightly so that I could see how it was cracking at the edge.

    Build a steam bath. I put a wire rack in the pan, pour water below the level of the wire rack, and place a saucepan with the future cream cheese on the wire rack.

    It turns out 400-550 ml of whey and 400-500 g of cream cheese. The yield depends on the fat content and quality of the starting products. This is cream cheese after light stirring. In the refrigerator it hardens and becomes thick.

Wonderful cheese!! I love it very much and cook it at least once a week, it turns out very tasty, today I’m baking chocolate cheesecake from it :) only I make it with slightly different proportions - for 1 liter of milk, 400 ml of cream and 200 g of sour cream) By the way, I tried to cook with homemade milk - I personally didn’t really like it, the cheese turns out with an oily taste and plus, due to the high fat content of the milk, a yellow crust forms on top and as a result the buttercream turns out with ugly red inclusions, so I don’t use homemade milk for this anymore) And I heat the cheese immediately on on the stove, it also turns out very well, I just set the heat to the lowest setting :)
