STEP 1

How to make homemade berry ice cream? Very simple and fast. To begin, prepare the necessary ingredients according to the list. Cream needs a fat content of 33-35%, suitable for whipping. You can use any berries, fresh or frozen. I have fresh raspberries.
STEP 2

Wash the raspberries and dry them. Place the berries in a sieve and wipe, cutting off the seeds. Rub thoroughly to extract as much juice as possible. If you use frozen berries, defrost them first, preserving the juice that has been released. Life hack: you can fill the remaining pulp with water, add sugar to taste and bring to a boil. You will get a delicious raspberry compote.
STEP 3

Pour powdered sugar into the raspberry juice and stir until it is completely dissolved. Instead of adding it to the raspberry puree, you can add powdered sugar when whipping the cream.
STEP 4

Beat the cream with a mixer until you obtain a fluffy, airy, tender mass. It is important not to beat the cream, otherwise it will separate and the butter will separate from it. In properly whipped cream, the trace from the whisk should remain and not drag on, or drag on very slowly.
STEP 5

Add the pureed raspberry puree to the whipped cream in several additions, beating the mixture until smooth each time.
STEP 6

The mass will be filled and will acquire a beautiful pale pink color.
STEP 7

Transfer the resulting mixture to a container (or ice cream maker if you have one) and place in the freezer for 4-5 hours until completely frozen.
STEP 8

Place the finished berry ice cream in bowls. Garnish with berries and mint and serve. Bon appetit!
