STEP 1
How to rub sea buckthorn with sugar for the winter? Prepare your food. Sea buckthorn usually ripens in September, which is when it is time to make this preparation. Choose berries that are completely ripe, but firm. Crumpled and spoiled ones can cause fermentation. Take the amount of sugar in a 1:1 ratio. You can use a little more, then the workpiece will be stored even better. But you don’t need less - the jam will spoil.
STEP 2
Sort the sea buckthorn well, selecting bad berries and removing debris with twigs. Place the berries in a large bowl and cover with cold, clean water. Wash the berries thoroughly with your hands, they can be very dirty. Then drain the water. And rinse the sea buckthorn in this way two more times. Then place the berries in a colander or sieve and let the water drain completely.
STEP 3
Place regular or paper towels on the table. Scatter the berries on them, trying to keep them in one layer. Leave the sea buckthorn in this form for 10 minutes to remove any remaining liquid from it. Then blot it on top. Preparations made from dry berries are stored much better.
STEP 4
Place the dry sea buckthorn into a large bowl. Fill it with sugar in the required proportion. Mix berries with sugar.
STEP 5
Puree the sea buckthorn with an immersion blender until pureed, all the berries should be chopped. If you don't have a blender, grind it through a meat grinder or pound it with a masher. You will get a rather liquid mass, as it should be - sea buckthorn contains a lot of juice. Leave it at room temperature for a couple of hours, and then put it in the refrigerator for 8 hours. This is necessary for the sugar to dissolve. Stir the mixture from time to time.
STEP 6
Prepare jars for preparation. It is better to choose a container of small volume so that after opening it is quickly eaten. Sterilize jars using any available method. For information on how to do this, follow the link at the end of the recipe. Boil the lids. Pour the pureed sea buckthorn into prepared dry jars and close them with lids. Store in a cool place. In winter, prepare fruit drinks, teas from this sea buckthorn, and add it to other dishes. Bon appetit!
