Grated currants with sugar without cooking

    How to make currants grated with sugar? Prepare the indicated products. To preserve all the beneficial substances in currants and their bright color, everything is prepared without heat treatment, that is, without cooking. Sugar, depending on storage conditions, may require a little more. Read more about this at the end of the recipe.

    The berries should be washed under running cold water. Drain off excess liquid and dry slightly. Sort through the currants, removing all wrinkled, spoiled berries, leaves and stalks.

    Add sugar to the currants and place everything in a blender bowl.

    Beat the currants and sugar until smooth. If you don’t have a blender, you can use a meat grinder or grind the berries in a mortar and then mix with the required amount of sugar. If after beating in a blender the sugar has dissolved, then you can proceed to the next step. If not, then you should wait until the sugar is completely dissolved, stirring the berries several times.

    Berry puree with dissolved sugar can be placed in sterilized jars, filling the jars to the neck. You can add a few tablespoons of sugar to each jar so that the layer of sugar completely covers the surface of the berry mass and you get a so-called “sugar plug”. Cover the jars with sterilized lids and place in the refrigerator or cool, dark place for storage.

This recipe is a great way to preserve all the benefits of blackcurrants in the shortest possible time. All you need to do is grind the berries with sugar, sterilize the jars and put the berry puree into the jars. I pureed the berries with sugar in a food processor. From 300 grams of currants and 300 grams of sugar, I got one small jar (350 ml) of grated currants. What was interesting to me was the advice to add sugar to the jar to form a “sugar plug”. I’m still good with blanks, so this trick is very useful for me. The taste of the ground currants turned out to be quite sweet, but not cloying. The consistency is very similar to whipped cream-honey. Thank you very much for the wonderful recipe for preparing blackcurrants!
