    Melt it. The pan must have a thick bottom and walls in order to maintain the desired temperature. If it is thin, the oil will overheat and be dark and may even burn.

    After boiling, reduce the temperature and do not stir the oil. It should barely boil, that is, simmer over low heat.

    We remove the foam on top periodically. It can be used for 3 days, put in porridge, baked goods, etc. Do not touch the foam that has sunk to the bottom.

    The oil is ready when it becomes transparent and sediment is visible at the bottom. Then we filter. If the oil becomes grainy after cooling, then you have “liquid gold”. Unfortunately, graininess is not always obtained; it depends on the original product.

Once upon a time, our grandmothers knew how to cook it correctly, and used it in a variety of dishes (fried it, added it to porridges and soups), because they knew that this oil was very healthy. I’ll add a little to what was said in the recipe: you need to choose a saucepan with the thickest bottom, and the butter should be good, preferably with a fat content of 82.5%. Ready ghee can be stored in a cool place for a very long time.
