An interesting cooking option, I haven’t tried it with pears and bananas yet. We need to try this method. When I make charlotte, I sprinkle the bottom of the pan with sugar and put apples on it, then the pie looks like caramel. And I beat the eggs separately (whites to sharp peaks), it turns out fluffier and more tender.
