Of course, it is best to take fresh, chilled fish (you can check the freshness of a fish by the color of its gills - they will be pink). Also, the fish should be elastic and when pressed with a finger, it should recover quickly enough.

    Rinse the fish well in running water and be sure to dry it with paper towels. Otherwise, when frying in oil, there will be a huge amount of splashes. Make sure that there are no droplets of water on the fish. You can take a salmon steak, or a ready-made fillet, but be sure to have it on the skin. If there is no skin, the fish will not hold its shape and will simply fall apart into small pieces.

    Salt the fish. Gently spread the salt throughout the piece. I recommend using coarse sea salt. Leave the fish for about 5 minutes so that the salt dissolves and the fish is salted.

    Sprinkle the fish with pepper. I use lemon-flavored white pepper, but you can use any ground pepper: black, red, allspice. I believe that a fish like salmon does not need a lot of seasoning - its taste is already amazing. But everyone has their own preferences. Therefore, if you wish, you can add some of your favorite herbs and seasonings. Of the herbs, I would recommend thyme, tarragon and dill.

    Pour 1 tablespoon of vegetable oil over the fish. Spread the oil over the entire piece of fish.

    Leave the salmon to marinate for literally 10-15 minutes, but it can be longer: the marinating time can even be increased to 1 hour. But in this case, put the workpiece in the refrigerator.
