Nik, you can make soft cottage cheese yourself: freeze low-fat sour cream or full-fat kefir directly in the bag. Then remove from the freezer, cut and remove the bag, put on a sieve to defrost. The whey drains off, leaving the most delicate, homogeneous curd. I read somewhere on children's websites this method of making cottage cheese for children, and I myself made it for my daughter all the time from kefir.
