Eggplant with bell pepper

STEP 1

To prepare eggplants with peppers for the winter you will need: eggplants, bell peppers, garlic, salt, sugar, vinegar, sunflower oil.
STEP 2

Wash, peel and chop the bell pepper as desired.
STEP 3

Peel the garlic and wash it.
STEP 4

Pass the bell pepper and garlic through a meat grinder.
STEP 5

Add salt.
STEP 6

Add sugar.
STEP 7

Pour in vinegar. Mix chopped pepper, garlic, salt, sugar, vinegar. Be sure to try it and if something is missing to your taste, add it.

Wash the eggplants, cut off the stem. Cut into circles 1cm thick.
STEP 9

Fry the eggplants on both sides until golden brown. There is no need to fry it too much. Place the eggplants in a frying pan with well-heated oil.
STEP 10

Place several eggplant slices on the bottom of sterilized jars.
STEP 11

Place a mixture of peppers, garlic, salt, sugar and vinegar on the eggplants.
STEP 12

Alternating layers of eggplant and layers of pepper, fill the entire jar.
STEP 13

Close the filled jars with sterilized lids. Place in a saucepan with a small piece of cloth on the bottom. Pour water up to the hangers of the jars and sterilize the jars for 15 minutes from the moment the water in the pan begins to boil.
STEP 14

After sterilization, roll up the lids of the jars, turn the top upside down and wrap them up. Keep it this way until the jars cool completely.
STEP 15

Eggplants and peppers are ready for the winter. Store the workpiece in a cool place.
