Wonderful recipe! Only I can’t fry eggplants properly. Either half-baked or burnt. It seems like I add oil, but it is instantly absorbed. If you add too much, they will become fatty. Share the secret of frying)

Eggplants are my favorite vegetable. I used to not like eggplants either, but now I’m ready to eat them for breakfast, lunch and dinner. I do almost the same thing, I just add cheese to the herbs and garlic and mayonnaise. I also fry the eggplants - slices, and then add the minced garlic cheese and roll it up. That's all, bon appetit.
