STEP 1
How to make dumplings with potatoes and fried onions? Start by preparing the filling. Prepare the necessary ingredients. Wash the potatoes thoroughly. You will need 3-4 onions.

Peel the potatoes, wash them, cut them into three or four pieces, and place them in a saucepan. Fill with water and put on fire to cook. When the potatoes boil, reduce the heat and add salt. You can also add bay leaf and 3-4 allspice, but this is not necessary.
STEP 3
While the potatoes are cooking, start frying. Peel the onions and rinse with cold water. Cut into medium sized cubes.
STEP 4
Pour refined vegetable oil into the frying pan and heat it up. Fry the onion over medium heat until golden brown. Stir occasionally, otherwise it will burn.
STEP 5
When the potatoes are cooked and can be easily pierced with a fork or knife, drain the water. Add butter, warm milk and fried onions. Using a potato masher, grind the potatoes into a smooth puree. The filling is ready. Leave it to cool while kneading the dough for dumplings.
STEP 6
How to prepare dough for dumplings? Prepare the ingredients according to the list. Take the highest grade wheat flour. Be sure to sift it to saturate it with oxygen. Remove the chicken egg from the refrigerator in advance so that it warms up to room temperature.
STEP 7
Pour the flour into a wide and deep bowl, where it will be convenient to knead the dough. Separately, beat an egg into a container, pour in boiled water at room temperature and a tablespoon of refined vegetable oil. I used olive oil, but you can use sunflower oil. Using a whisk or fork, whisk the liquid until smooth and pour into the flour.
STEP 8
Knead the dough. Since everyone's flour is different, the amount may be required more or less than indicated in the recipe, check the consistency of the dough. It should be quite cool and not stick to your hands. Cover the dough with a towel and leave for 40 minutes.
STEP 9
Roll out part of the dough into a circle about 3 mm thick. The thinner the dough, the tastier the dumplings will be. Use a special mold to squeeze out circles. Place about 1 teaspoon in the middle of each circle. l filling and seal the dumplings. If you want, you can make a braid like this. Important! Make sure that no filling or fat gets on the edges of the dough piece, otherwise the dumplings will boil.
STEP 10
You need to cook in a large pan, the dumplings should float freely so that they do not stick together. Pour water (about 3 liters) and put on fire. When the water boils, add salt (0.5 tablespoon). Use a spoon to create a funnel in the water and twist in a counterclockwise direction. Place dumplings (15 pcs) into the pan. When they boil, reduce the heat to low and simmer for about 4-6 minutes. The thicker the dough for dumplings, the longer they will cook.
STEP 11
While the dumplings are cooking, prepare the ingredients to serve the dumplings. Take 3 medium onions, refined vegetable oil and high-quality butter.
STEP 12
Peel the onion, rinse with cold water and cut into thin rings. If you have large onions, then cut them into half rings. Pour vegetable oil into a frying pan, heat it, add the onion and fry until golden brown.
STEP 13
Remove the finished dumplings with a slotted spoon into a colander to drain excess liquid. Then transfer to a bowl, add butter, fried onions to the dumplings and shake well with the lid closed so that the dumplings are well mixed with the oil and frying.
