    We wash the duck well, trim off excess fat, dry it. Mix mustard, sour cream, salt, pepper and other spices (I added sweet paprika and a little suneli hop) in a bowl.

    Wash the apples and oranges and wipe dry. We take out the seeds from the apples, the seeds from the oranges, if any, and cut off the white partitions inside. Cut the fruit into large pieces.

    Stuff the duck tightly and seal the hole with toothpicks.

    Place the duck in a baking sleeve and place the remaining fruit there. Tie it tightly and place it on a baking sheet. Don't forget to poke a few holes in the sleeve! Place the baking sheet with the prepared duck in the oven and turn it on at 190 degrees. Bake for two hours. You don’t even have to cut the sleeve—everything turns beautifully brown.
