    How to prepare dried persimmons for the winter. Prepare the necessary ingredients. Take persimmons that are ripe, firm, with shiny, smooth skin. Do not use soft or overripe fruits. Rinse the persimmons under water and dry with a towel. Turn on the oven to 130 degrees in advance.

    Peel the persimmon and remove the stalk. Cut the fruits in half. Cut each half into slices 3-5 mm thick. I got 16 slices from one persimmon.

    Cover a baking tray with parchment and place persimmon slices on it. Place the tray in the oven, preheated to 130°C, and leave for about 30 minutes.

    After the specified time, remove the baking sheet from the oven and turn over the persimmon slices. Place the pan in the oven for another 30 minutes. Be careful not to burn the persimmons. If the slices start to burn, then reduce the temperature to 90°C.

    Leave the persimmon slices to dry for 1-2 days. Thanks to drying in the open air, persimmons retain more vitamins and nutrients. If desired, you can immediately dry it in the oven, increasing the time by 2-3 times.

    The finished dried persimmon should have a crispy crust and a tender core. At the same time, it should not be overdried and should not break. Bend a piece of persimmon; if it does not break, then the persimmon is not overdried. Persimmons should be stored in tightly closed containers, jars and bags to avoid moisture and insects that live in dried fruits.
