STEP 1

How to knead shortbread dough without sugar and eggs? Prepare all the necessary ingredients. All products must be refrigerated. You can keep the water in the freezer to keep it ice cold. This will allow you to get especially crispy products. Place cold butter in a bowl. Cut it into cubes with a knife. Try not to touch it with your hands.

Add sifted wheat flour. Thanks to sifting, the flour will be saturated with oxygen, and the finished dough will be more tender.
STEP 3

Grind the butter and flour using a mixer or blender into crumbs, but not with your hands so as not to transfer heat to the ingredients. In this case, the dough will not turn out as it should.
STEP 4

Start pouring cooled water into the bowl with the shortbread crumbs. You need to do this one tablespoon at a time, stirring the mass with a mixer each time until the crumbs become fine and uniform in size.
STEP 5

Then gather the dough into a ball with your hands. You don’t need to knead it for a long time, otherwise the products made from it will turn out hard and dense. The main task is to bring the dough together. Wrap the shortcrust pastry ball in cling film and put it in the refrigerator for half an hour.
