  1. STEP 1

    STEP 1

How to make dough for dumplings with kefir? Prepare your food. Take the highest grade flour. Kefir - fat content of at least 2%. Remove kefir from the refrigerator 1-1.5 hours before cooking. To make the dough more successful, it should be at room temperature. If you don’t have time to do this, just heat the kefir or dilute it with hot water. Just be careful, make sure that the kefir does not curdle.

  2. STEP 2

    STEP 2

To knead the dough, take a deep bowl in which it will be convenient to mix the dry ingredients with kefir. Sift the amount of flour specified in the recipe to remove small debris and saturate it with oxygen. To make the dough successful, you need to add liquid to dry, and not vice versa.

  3. STEP 3

    STEP 3

In a separate container, mix kefir with salt and sugar until completely dissolved. Add soda and mix thoroughly.

  4. STEP 4

    STEP 4

Make a hole in the flour and pour the liquid component - kefir - into it.

  5. STEP 5

    STEP 5

Gently start kneading the dough, touching only the kefir and not touching the flour. This way the flour will be added gradually and the dough will become homogeneous.

  6. STEP 6

    STEP 6

Continue kneading. If you run out of flour and the dough is still quite liquid, add a little more sifted flour. You may need more or less of the stated quantity. Check the consistency of the dough.

  7. STEP 7

    STEP 7

Knead the dough thoroughly. When it becomes difficult to knead with a spoon, transfer the dough to a dry and clean horizontal work surface and start doing it with your hands.

  8. STEP 8

    STEP 8

The dough should be slightly elastic, but tender and not stick to your hands. Don't make it too steep or you'll end up with rubbery dumplings. Knead the dough and leave it to rest so that the gluten develops well. During this time, you can prepare the filling and put water to boil to cook the dumplings. I have some flour left. I used it when making dumplings.

I have never kneaded the dough for dumplings with kefir. I usually knead unleavened dough using water. I'm happy with the result. I'll try it with kefir and see which is better. Thanks for the idea.

I have been looking for a good dough for dumplings for a long time. I took note of your recipe. I'll try to do it. Tell me, please, is this dough for steamed dumplings or for dumplings that need to be boiled in water? Thank you)))

Today I tried to make the dough according to your recipe. The dough turned out good. I made dumplings with cherries. I boiled some of the dumplings and froze some of them. I'll try to make a couple. The dumplings turned out great!!! I also want to make dough with eggs for dumplings. I'll see which one I like best))) Still, the dumplings turned out a little dense in the place where there was more dough. Maybe I too much flour, although the dough seemed soft and a little sticky. The dough was a pleasure to work with. Here is my photo report)))
