Dorado with vegetables in sour cream

STEP 1

How to cook dorado with vegetables in sour cream? Prepare all products. If you have frozen fish, then remove it from the freezer in advance and defrost it at room temperature. Clean the fish from scales and remove the entrails.
STEP 2

To ensure that the dorado fit well in the pan, I removed the heads and tails. If you keep the fish with its head, be sure to remove the gills. Rinse the carcasses in clean cold water and dry with napkins or a towel.
STEP 3

Prepare the vegetables. Peel the onions and carrots. Rinse and dry. Place sour cream and all the spices in a small deep container. The set of seasonings can be absolutely anything you want. I used garlic powder, paprika and a mixture of herbs de Provence. Add salt to taste. Mix everything thoroughly.
STEP 4

Cut the onion into thin half rings or a little smaller. Chop the carrots into cubes. To chop carrots, you can use a grater with large teeth or a vegetable cutter for Korean salads.
STEP 5

Add odorless vegetable oil to the frying pan. When the oil is hot enough, fry the dorado until done. Lightly salt as desired, but keep in mind that the sour cream already contains some salt.
STEP 6

Add carrots and onions to the oil where the fish was fried. Stirring, cook until the carrots are soft and the onions are golden brown.
STEP 7

Place the fish on top of the frying dish.
STEP 8

Distribute the sour cream evenly over the surface of the dorado.
STEP 9

Cover the pan with a lid and simmer over low heat. You should not leave it on the stove for a long time, as the sour cream may curdle and form flakes. From 1 to 5 minutes will be enough (depending on the intensity of the flame).
STEP 10

Serve dorado with vegetables and sour cream, garnished with fresh herbs.
