Dandelion love jam

Since ancient times, a love potion was prepared using dandelion jam! For many, dandelion is a weed that has clogged the entire territory of their summer cottage. For children it is a favorite material for making solar headwear, for zealous housewives it is an ingredient for dishes and the treatment of illnesses. The young leaves of the plant are devoid of bitterness; the leaves are smoked instead of tobacco for coughs and consumed as a salad. Honey is prepared from the opened buds, and fragrant wine and aromatic jam are made from the flowers. Roasted roots replace coffee. Dandelion jam is very useful, cleanses the blood and liver, tones and relieves the effects of a cold. Unlike many other medicinal plants, dandelion has no side effects and is absolutely safe. The jam season is in late April to mid-May, when the flowers are fully ripe and rich in nectar.

  1. STEP 1

    STEP 1

Pick dandelion heads. Cut off the stems.

  2. STEP 2

    STEP 2

All parts of the plant contain milky sap. There is not much of it in the flowers, but it is still advisable to soak them for 20 minutes in cold water before using them to remove the bitterness. Although some housewives do not soak flowers so as not to destroy beneficial pollen. Before use, the flowers are washed well in several waters, since they not only contain a small amount of milky juice (near the stem), but may also contain small insects. Squeeze out the flowers.

  3. STEP 3

    STEP 3

Transfer to a saucepan. Pour hot water. Bring to a boil. Cook for 10 minutes over moderate heat.

  4. STEP 4

    STEP 4

Remove from heat and leave for 20 minutes.

  5. STEP 5

    STEP 5

To make the jam more fragrant, I add lemon to it. Wash the lemon and cut it into thin slices along with the peel.

  6. STEP 6

    STEP 6

Pour the broth into a cooking vessel. Squeeze out the flowers - you won't need them anymore. Add sugar to the broth. Add chopped lemon. Cook over low heat for 30 minutes, removing any foam that appears.

  7. STEP 7

    STEP 7

When hot, pour into sterile, dry glass jars and seal tightly.

  8. STEP 8

    STEP 8

Jam becomes much thicker when cold and stores well in a cool place.
