STEP 1

How to make custard eclairs? Prepare the necessary ingredients for this. Sift the flour through a sieve in advance. Milk for cream can be of any fat content. But choose 82% butter. It should be fresh and tasty.
STEP 2

To prepare the eclair dough, combine water and butter. Place on the fire, bring to a boil and simmer for a couple of minutes until the butter completely melts and mixes with water.

Pour flour into the boiling mass and mix everything quickly. The flour will begin to brew and clump together.
STEP 4

Knead the custard lump of dough over the fire for a minute. Then remove the pan from the heat and leave to cool until warm. Stir to help the dough cool faster.

At this time, you can start preparing the cream. Combine the milk and sugar and bring to a boil, stirring until the sugar dissolves.
STEP 6

In a separate bowl, mix eggs with flour and vanilla. Pour in some milk from the total quantity.

Mix everything with a mixer so that there are no lumps of flour left. While stirring, pour hot milk into the egg mixture.

Then pour everything back into the pan and return to the heat. Bring the cream to a boil while stirring constantly. At the same time it will become thicker.

Add butter to hot cream. It will start to melt. Stir the butter into the cream.
STEP 10

You can use a mixer for mixing. The finished cream is thick and homogeneous. Cover it with a lid and leave to cool.
STEP 11

The eclair dough has cooled to a warm state. Add eggs one at a time and mix them thoroughly into the dough. If the eggs are small, you may need 1-2 more. Check the consistency of the dough.
STEP 12

The eclair dough turns out like a thick cream. It drips a little from the spoon, but does not spread on the surface.
STEP 13

Using a toothed attachment, pipe the dough onto a baking sheet lined with parchment or a Teflon mat. Bake the eclairs in the oven, preheated to 180 degrees, for 20-25 minutes. Be guided by your oven. Do not open the door while baking, otherwise the eclairs will fall off.
STEP 14

The eclairs increased in size and became golden in color. Remove them from the oven and cool.
STEP 15

Make a cut on the side and fill the eclairs with the prepared cream.
STEP 16

Custard eclairs are ready! I got exactly 31 filled eclairs. And there wasn't a drop of extra cream left. Ready-made eclairs can be sprinkled with powdered sugar or decorated with melted chocolate. Enjoy your treat!
